Quinces and the last of the mulberries

The Shipwrights Cottage food forest is giving again, so apart from eating the fresh fruit what have I been doing with the produce? Preserving food is a easy way to enjoy the fruits of the garden all year round, sometimes years later. So this week at Shipwrights Cottage we have made:
Mulberry Jelly and Mulberry fruit leather (using the last of the frozen mulberries from December)
Quince jelly and Quince paste
Quince and Honey Ice-cream
We've pottered away in the evenings doing all of the various steps which don't take that much time. The recipes I use are usually the ones that call for the least preparation. The Quince Jelly recipe is a CWA one that uses whole fruit, you don't event need to strain the jelly before bottling. You then get cooked fruit for desserts and paste!
