Curtido Roja or there has been a murder


It's fermenting time at Shipwrights Cottage as organic cabbages are $3 at the local farmers market and the beetroot are also cheap. My favourite is Curtido Roja a Salvadorian sauerkraut with beetroot. One cabbage, two beetroots and a handful of beans make two good sized jars. One to keep and one to give away as a present. As with all slow jobs there is an initial burst of activity then two weeks of looking, poking and tasting before you can eat the ferment.
